Cavatini Casserole

1 -  lb. ground beef
Dried minced onion or 1/4 diced onion
1 - 15 oz. can of pizza sauce
1 small can of mushrooms (drained)
1 small pkg. sliced pepperoni
2 cups rotini noodles (cooked)
1 cup shredded mozzarella cheese

Brown beef and onion then drain.  Boil pasta, rinse.  Combine ingredients except cheese.  Layer mixture and cheese twice in a microwave safe bowl or dish.  Cover with waxed paper and cook 15 minutes.   *Oven directions:  Grease 9 x 13 baking dish, layer and cover with foil.  Bake at 350 for 30 minutes.

Cheese Sauce for Vegetables

1 T. butter
1 T. flour
1 c. milk
1 1/2 c. velvet cheese (cubed)
1/8 t. salt
1/2 t. sugar
Dash of pepper

Melt butter in saucepan.  Remove from heat, add flour until smooth.  Gradually add milk and return to low heat stirring constantly until boiling.  Add cubed cheese until melted.  Remove from heat and add remaining ingredients.  Pour over cooked vegetables just before serving.  Good with cauliflower, broccoli, and california blend vegetables.

Pistachio Pudding Salad

One 8 oz. container of whipped topping
1 small pkg. of instant pistachio pudding
1 small can of crushed pineapple (undrained)
1 cup of mini marshmallows
1/2 c. chopped walnuts (optional)

Combine everything in a large serving bowl and chill.
